My Epiphany!

So my goal lately has been to provide yummy HEALTHY foods for my family. We recently had a huge medical issue crop up. We beat it and now I'm even more obsessed with creating meals that are yummy but healthy. We had dabbled in this area as we were learning that food management was a great way to help with Diabetes. My beautiful daughter "Peanut" was diagnosed at 4 with Type one Diabetes, so we had been learning as we went.

One of the first things I did was go to my sister Grace, help me meal plan PLEASE!!! So we started using a website that we had used before for my family as we were still learning how to combated my daughter Diabetes. So now we buy organic when we can use whole foods not process and as much as we can food grown, processed and packaged in the USA.

Here at our zoo (yes zoo our family has been a animal rescue family for almost 8 years) we seen things that make you cry both happy and sad tears but in the learning what it takes to take care of some of our more challenging rescues we learned that nothing is impossible so starts my journey to provide the most natural and organic foods for my family in hopes of providing a more healthy life for us all.

We have many days where mom doesn't want to cook so I also started thinking MREs yes I know those things are only meant for desperate situations but theses were desperate times I was exhausted and had no desire to think about putting a meal together!

So it begins Mom's MREs (Meals Ready to Eat) or better known a Freezer meals.

The Saturday after that night of total disinterest and a see food night as one of my friends calls the nights where your kids eat what they see ( soup, veggies, fruits and things that are in there for sick days only like noodle cups etc.) I decided to put meals in freezer safe bags for at least 4 meals that if I had another evening like the last all I had to do was defrost it.

we started with taco soup and Chili as they were easy and of the same ingredients.

cook the burger we try to use organic home grown meats so this could be local beef, if you hunt game, really what ever you would like to eat. we used moose as we had a few pounds. Next batch will be goat meat.

If you are cooking all 4 pounds to do these two dinners you will need two pots. divide evenly and add the spices for the taco soup (store bought or make your own) and the Chili seasoning to the other pot (same as the taco store or your won).

you pick out your canned ingredients (I use Western Family brand one because it is usually cheaper but the main reason is it is a product of the USA so grown, processed and packaged here.)

Beans (I use Black, white, pinto and a kidney)

Corn (I only use this for Taco soup.)

Petite diced tomatoes or the chili, onion and tomato

a 8 oz can of tomato sauce

mix all ingredients in there respective pots

Chili add to seasoned meat
Beans
Tomatoes
Tomato sauce

Taco Soup add to seasoned meat
all of the above ingredients
corn

Let cool and then place in freezer bags you will need 4 bags, this divides everything into about 5 portions, once divided freeze.

Not only have you just made Mom's MREs but you have made two types of meals for about 10 a bag. you have also created yummy meals with very few carbs, fat and preservatives.
